A little twist on the classic Toad in the Hole or Egg in a Basket, this quick breakfast recipe is fun to make with baby, gluten free if that’s your thing, and always hits the spot!

For this recipe, crack an egg in a corn tortilla basket for a simple way to serve egg and tortilla to baby. It’s basically a breakfast taco, but so much easier for baby’s little hands to manage.

Cut out a hole in the middle of the tortilla, or any shape you like. This can be something fun for an older baby to do with a small cookie cutter, or you can use a larger tortilla and make a face. It’s really a good time to get creative and have fun, even if you only have a few minutes. Sometimes in all the daily tasks of parenting it can be easy to forget that we had babies to bring more joy into our lives, so let’s live in that joy and play with our food 🙂

I like to let it cook until the egg white turns white and smash the yolk a little before I flip to finish cooking on the other side. I love using corn tortillas for this recipe, but it’s so versatile – you can really use whatever floats your boat or that you have on hand,  like pita bread, flour tortilla, loaf bread, or a spinach wrap. You can also make it more taco-like and add some fresh veggies as some fun toppings.

Toad in a “Corn” Hole

A little twist on the classic Toad in the Hole or Egg in a Basket, this quick recipe is fun to make with baby and always hits the spot!

Cook Time 3 minutes

Ingredients
  

  • 1 Egg
  • 1 Corn Tortilla

Instructions
 

  • Gently fold the tortilla in half and take a bite out of the middle, making a circle in the center of the tortilla, and unfold.
  • Look through the hole and make a funny face with your tortilla to your baby. Place in a lightly buttered or oiled skillet.
  • Crack an egg into the hole letting the yolk sit in the center, let simmer until the egg white turns solid.
  • Gently smash the yolk and flip.
  • Fully cook on both sides, cool, and serve.

Notes

You can make this recipe with whatever is in your pantry, like pita bread, flour tortilla, loaf bread, or a spinach wrap. Also add on fresh toppings for some pizzazz – sliced tomato, fresh avocado, or chopped chives.
